Boiled Peanuts

Good protein source and may be grown in many areas of the country, not just the southern states.

I copied this simple recipe from a bag of raw peanuts:

Boiled Peanuts

Raw Peanuts, in shell
2 Oz. salt per pound of nuts

Cover with water and boil for 2 hours.
Do not let run dry.
Let soak for at least 1 hour.  Longer for more flavor
Spices may be added at the beginning, such as peppers, Cinnamon, Nutmeg, etc.

Drain and eat immediately or refrigerate, or freeze in shell.

My advice:
Nuts may be dried, in or out of shell, if you prefer harder peanuts and slightly longer storage life.
They contain oils which will go rancid over time, so either freeze or store with oxygen absorbing packs.

Although I do not have a recipe, I believe they can be shelled and then canned. Not 100% sure, though.

Just my opinion.

I did a little search and found this site, with instructions (recipe?) for canning boiled peanuts.

DO NOTE, they must be pressure canned just like meats.  They contain protein and oils and most importantly, they are low acid which need the high temperature canning process.

Jerry and everyone else, do you know of a local source for raw peanuts (seed peanuts)?

I'm not able to grown them at our location, but a small bag would make a good addition to our prepper stores.

They would need to be replaced every year or two or three, but I can eat peanuts, especially boiled, so there would be no loss from throwing out old seed.

I've found, but NOT confirmed, that Walmart carries raw peanuts, brand name is Hines, 16oz plastic bag.

Price is only $1.98 / lb.

I will need to go to a Walmart, locally to check on actual stock.
