I've posted on the topic before and this article gives an Excellent explanation of WHY it works.

It also gives Great instructions on processing fresh eggs and storing them.

You DON"T just let them set untouched until you need them.

NOTE: Mineral oil is available in most drug stores and some grocery stores.

DO NOTE the need to rotate the eggs after oiling.

ALSO NOTE that the egg whites gradually lose the ability to be whipped for some recipes.
