I do this once every couple of months.  I save all our bones, mostly chicken and pork, in a freezer bag and do an 8-12 hour session in the crockpot.

When done, the bones are hand stripped of all edible parts.  These are NOT added back into the broth, but usually eaten as a meal or sandwich spread.  Then the cooled broth goes to the refrigerator or freezer.

I use 1 gallon Tupperware but it can also be spread among smaller containers.  Label with dates and rotate.

Occasionally I will add spices during the cook down, but usually I'll wait until I use the frozen broth in some dish.  Adding vegetables, fresh or frozen, makes a good soup which will serve at least 6.

I DO NOT add salt because we already get enough from other packaged foods.

In a crisis situation, a continuous pot of bone "soup", over a camp fire if necessary, will give you some good nutrition while making your food stores last longer.
