Emergency Food of Norway
   During the German occupation of Norway from 1940-45 war, food was scares with imports cut off and most of the “good stuff” being taken for the Nazi war effort.  Many lived on a diet made up of largely of “emergency foods” to survive. Fish was always a Norwegian mainstay and will likely be one resource that we in our area too can exploit to supplement our stores and garden. Like the Norse, one of my fall back food strategy is to adding ½ loaf bread a day per person to bring our diet up an extra 500 calories. Hoping we can rely on our Wisconsin (unfortunately fresh only) waters to supply much of the extra required protein needed. Even as a fall back, these “emergency foods” seemed monotonous and less than palatable but they lived on them for 5 years! Also, it is interesting note that in a national health examination in 1946, they found that the Norwegian people had never at any point in history been healthier.
   
Typical Emergency Food Items   
Turnip-steak (fried in fish oil) with potatoes - At least 3 times a week
Herring pancakes (fried in fish oil)
Fish cakes made from ground dry fish and flour
Small whole fish with potatoes and carrots and turnip
Potatoes and boiled turnips and carrots
Bark-bread 50/50 flour and bark-flour

Fish Flour Burgers with Oats
Soak 5 oz fish flour and 5 oz oats in a 3/4 quart mixture of water and milk.
After it swells, add another 5 oz fish flour, salt, pepper and 2 tablespoons of baking soda. Make into burgers and fry in a preheated pan with fish oil.
Serve with boiled potatoes, turnips or sauerkraut.
 
On Sundays the Norwegians made an "after church coffee and cake":
Emergency coffee- 20% coffee beans / 80% peas roasted and ground together
Potato cake with freedom-fighter cream
1 lbs. potatoes
2-3 teaspoons honey
5 tablespoons flour (any grain)
2 teaspoons baking soda
vanilla or cinnamon
Freedom-fighter cream
half a quart of skim milk
2 tablespoons flour (any grain)
2 tablespoons honey
vanilla

Hungry post-EOTWAWKI survivors can live on this kind of food too. If the Norwegians did for 5 years and still came out healthy, so can we. 
•   Potatoes and the various grains for calories
•   Peas, carrots, turnips or cabbage for vitamins and minerals
•   Fish for complete protein add the occasional raccoon, squirrel and bird
Fish the river and lakes with nets and lines and family or community gardens supplemented by gathered wild plants and acorns could make the difference.  Post-EOTWAWKI survivors need not starve!
