Title: Dehydrating Eggs

Whole eggs are fairly easy to dehydrate (as scrambled eggs) and can last for a year or more if properly stored.

You do need a dehydrator because it takes up to 18 hours for processing.

Having a vacuum sealer will greatly extend the storage time, as will the use of oxygen absorbers.

Although I will not recommend it to others due to the risk, I have successfully dehydrated fresh eggs. I knew it was a risk, but I tried it anyway, back in the late 70s when there were not as many options as there are now. I doubt I would try again, unless there was an extreme need, and I had the appropriate equipment again.

Scramble eggs, however, are not that difficult.

Just my opinion.
