Since we all look that the marked dates on our prepper food stock (right?)...  What does that date mean in terms of how useful the food is right now?

Not only is there a lot of confusion on the part of consumers (that's us), the food manufacturers and packagers cannot agree on a common date labeling system.  You're still the potential victim of sales tactics designed to stop "hording" of foods and encourage you to buy more...

DO NOTE that some foods may (possibly, could happen, might be) actually be bad to eat after the marked date...  How can you tell?

I try to avoid "green eggs and green meats" but I'll be quiet willing to trim the mold off a block of cheese.  Hint, keep that cheese in a plastic bag with about a 1/2 teaspoon of Vinegar.  It prevents the mold growth.
