I run out of eggs frequently and these are some options when you cannot just run down to the local store.

There are good descriptions of how to use these in the article:
1) Applesauce
2) Banana
3) Ground Flax Seeds
4) Tofu
5) Water, Oil and Baking Powder
6) Bean Liquid (from commercially canned beans. Home canned may not have the same liquid).
