This is specific to potatoes.

From personal experience, potatoes bought from a store are generally already bruised and at high risk of developing rot.  Don't drop a bag of potatoes, this will bruise them...

Also, storing potatoes in a warm area will lead to rapid loss.   However, they also don't do well in a frost-free refrigerator as this causes rapid dehydration.

The Indians of South America up in the cold dry mountains let the potatoes freeze overnight then thaw in the sun. The water separates from the potato flesh and they crush them (with their feet). The pulp is set in the sun and wind to dry for storage.
