I too have suffered from the glut of Zucchini from my gardens.  I lamented the lack of a good use for Zucchini (other than paper weights for my neighbors front steps).

At last, a recipe which actually TASTES like something you would want to eat...

Faux Dehydrated Pineapple

It occurs to me that you could grind a real pineapple and save the juice for this recipe.  The pineapple pulp can be frozen and used for other things (Pineapple Upside Down Cake?).

You can also use Honey instead of sugar.
