Title: Jam without Extra Pectin
Post by: TWP on August 09, 2016, 11:48:04 AM
Most recipes call for the use of extra Pectin (not just the pectin in the fruit itself).

This recipe needs only the fruit, lemon or lime juice and optional sugar.

Please excuse the first part of the post which contains the authors rant on non-natural foods which, while valid, is off topic.

We have some small wild and seedling apples that we grow for animal food, cross pollination and food use. They get red but stay hard and hang on the trees until spring. When we make jelly from just abut any fruit, we toss some into the steam extractor to add natural pectin and a little apple flavor.
