I did not know that raccoon needs special attention before cooking...
Squirrel, Raccoon, Frog, Armadillo, Beaver and Snake recipes, among others. Twenty five different game.
I've done Rattlesnake, you Should boil the meat before roasting, to avoid / reduce the "snaky" taste. No, it doesn't taste like chicken...
