Poor Man’s Rice Pudding 1700s American Recipe
Rice        4 oz
Milk         1 qt
Butter      1 Tbl spoon (or more if you had it)
Salt          not defined maybe 1/8 teaspoon
Allspice  not defined maybe 1/4 teaspoon more if you had it (generally the cheapest spice at the time)
Sugar (maple sugar or honey)  3 oz
Mix well then bake at 350o F (more or less) for 1½ hrs or until done

Like most early recipe it was pretty loose. The cook was to adjust according to their families taste and what you could afford.
