This is container gardening on a large scale.  Note the recommendation to use dollys under the troughs to make moving them easier.

I suspect this will also reduce the amount of water needed because there is minimal evaporation from the top and NO water can sink into the ground.

Also note that potatoes are not the only crop which works for this method.

The root crops are kept in the troughs as winter storage, just be sure they don't freeze..
