Stewed Pork Chops

I've been making this for the last several months and it is so good that I wanted to share:

Stewed Port Chops

3 medium size Port Chops, thawed or frozen. About 12 - 16 Oz.
1 medium Onion, white or yellow, chopped to roughly 1/2 inch chunks.
1 14 Oz, can diced tomatoes or two whole tomatoes, par boiled, skinned and diced.
2 tbs granulated Garlic or 4 cloves fresh garlic, chopped fine.
1/4 tsp Black Pepper.
1 tsp Oregano.
1 tsp Basil.

In a large skillet, cover chops with 1 inch of water.

Add half of the Garlic.

Bring skillet to rolling boil, cover and let cook for 1 hour.

Add remaining ingredients and enough water to submerge the chops.

Reduce heat to simmer, cover skillet.

Continue to simmer for 1 1/2 to 2 hours.  Enjoy the smell.

Remove cover and let stewed chops simmer until the mix thickens.  You should still have large chunks of tomatoe and onion visible.  Chops should be fall-off-the-bone tender.

Server chops hot, covered with stewed mixture.
