The colonist brought the dandelion to the Americas for good reasons. Good spring potage plant, edible roots and flowers.
Dandelion coffee is made just like chicory coffee: dry, roast until dark (adjust darkness for your taste) then grind. chicory is tastier, IMO, but they are not coffee bean coffee. I have some caffeine powder to add that might help the "get your eyes propped open" in the morning.
Now something really good is dandelion flower "honey". Although I forget the exact proportions but you prepare blossoms like for "dandelion bead" then steep in a 1:1 sugar syrup. It will take on the color of honey and has almost the taste of honey too.
