Part 1 talks about the history of Vinegar and it's health benefits.  The author gives some useful detail on how and why Vinegar is so useful.

Part 2 addresses how to make Vinegar, and specifically Apple Cider Vinegar because of added benefits of that particular variety.

DO NOTE that it is also a good idea to stock "distilled white vinegar" which can be purchased in higher strength than is usually possible via home-brewing.
