Given a longer term EOTWAWKI, you will face the need to store foods, while lacking access to refrigeration.

Fermenting is a well known method to prepare and keep vegetables from season to season, and perhaps longer.

This article describes the methods and tools needed to ferment several common foods, some of which you may already use, some you may find repulsive (Kimchi) and some you may want to try.

I've personally made sauerkraut, beet and cucumber pickles.  My experience with Kimchi has been negative, but if you like it, you can certainly make your own.

DO NOTE that spices are strongly recommended for most of these foods, particularly Chutney.  Those spices may be in limited supply, post "Event", so plan on what you might need...  Either stockpile or grow your own.
