This is a multi-part artlcle about one persons successes and failures with food drying/dehydrating.
It contains some good advice on where ot find used equipment and how much to expect to pay (pricey is not always bhttps://survivalblog.com/so-tell-me-again-part-3-by-m-p/est).

My one comment is about oxygen absorbers: they may not be available after a SHTF event, so either stock up now or use a vacuum pump. Vacuum pumps make more sense to me, although the storage life of the food may be reduced because you cannot remove all oxygen via vacuum.
