This is a very simple method to make Apple Vinegar.

You really want to be able to make vinegar for multiple reasons:

Canning
Cleaning
Health

You can make it from apple scraps alone (as was traditional when sugar was too costly) but it may not have enough acetic acid to reach the current standard of 5%. It could be concentrated by boiling if this is important.

Alsp steam extraction of the juice from sour wild or green domestic apples can be fermented and your will increase the acidity by add malic acid that gives the apples their acid naturally.
