Mint - Uses, Growing, Harvesting and Storing

A good article about the mint family of plants.  It has a couple of good pictures, which may help those who don't know the plant.

I was not aware of how many uses exist for this plant family.

Of course I like the smell and flavor in some recipes, but the uses go beyond just food.

We have both Spearmint and Peppermint. Peppermint Is more desirable for medical use but Spearmint is better tasting in tea. Peppermint is a natural sterile hydread and can produce seeds but only spreads by rhizomes. Spearmint can spread by both and spreads very easily.   

Alway dry mints at very low temperatures, preferably, at warm room temperature.

I wonder if freeze drying would work?  The oils in mints are very volatile and the vacuum might cause these to be lost, even at the lower temperatures.

I have read that freeze drying herbs works and it sounds like a good way to do it.
