I've done poached rattlesnake... It tasted like, well, snake.  Hunger helps a lot with snake.

I also sold the snake skin at a flea market for $5.00.  I'm not sure whether this would be good barter goods in a post-event world, but it is something to keep in mind.

I have mostly had rattlesnake. A couple different types. All tasted good when sauted. Rat snake, Bull snake, and a couple of others were okay, but rattlesnake is definitely my favorite.

Just my opinion.
